Gingerbread Cake

I love traditions and the little things that we do the same each year to make it feel more like Christmas. Setting up a few things that the girls can look forward to each year as they grow up.

The second Christmas that Tim and I were married, we started making a gingerbread house and decorating it every year. It just gets more and more fun as Eva gets older and now we add Bekah in for her first Christmas.

Here is our family favorite gingerbread cake recipe that we make every year. If I’m not making it in the bundt pan, than I am doing it in a 9x13 glass pan and putting a foamy lemon sauce over it!

Christmas 2023

Ingredients, Gingerbread Cake:

Cake Flour

Ground Ginger

Cinnamon

Ground Cloves

Nutmeg

Salt

Baking Powder

Sugar

Brown Sugar

Butter

Eggs

Vanilla

Milk

Ingredients, Foamy Lemon Sauce:

Butter

Sugar

Eggs

Milk

Lemon Juice

Vanilla

Cake Recipe:

1 cup sugar

2/3 cup packed brown sugar

1 cup butter softened

Beat together until light and fluffy, scraping bowl often.

4 eggs

Add one at a time, beating well after each addition.

1 tsp vanilla

Add and blend in

2 tsp ground ginger

1 tsp cinnamon

1/4 tsp ground cloves

1/4 tsp nutmeg

1 tsp salt

2 tsp baking powder

Blend into batter thoroughly

2 3/4 cup flour

1 1/4 cup milk

Beat in flour alternately with milk. Pour into a greased 9x13 pan and bake at 350 for about 30 minutes until a knife or toothpick inserted into the center comes out clean.

Foamy Lemon Sauce (optional)

1/4 cup butter

1 cup sugar

2 egg yolks (save the whites)

2 TBS milk

Put together in a double broiler or a pot (watch it very closely in a pot!). Slowly heat it, mixing it together well as the butter melts. Cook until thick, stirring constantly. Remove from heat.

1 - ? TBS of lemon juice (start with one and then add lemon juice to taste)

1/2 tsp vanilla

Add to mixture in pan.

2 egg whites

Beat slightly and then add to lemon juice mixture. Beat thoroughly all together. Take a fork and poke holes all over the top of the warm gingerbread cake. Pour lemon juice mixture over it and let it all soak in. It can be served immediately or chilled overnight.
