Potato Soup

Fall really hit this week with the rain. We have been loving the cooler weather (except when mom forgets everyone’s coats). *Sigh* I haven’t got adjusted to the change in temps yet!

On these lovely days, soup ends up at the top of my list for suppers :) Here is a family favorite that is easy to make and filling. You can eat it as is or add other veggies, ham, or more bacon. Trust me, you won’t mess it up :)

Ingredients

Potatoes

Onion

Celery (optional)

Milk

Flour

Salt

Butter

Chives

Crumbled Bacon or Bacon Bits

Shredded Cheese

Recipe

3 medium potatoes, diced

1/4 cup chopped onion

1/4 cup celery (optional)

Cook in a small amount of water until tender. Drain excess water.

2 cups milk

Add and heat until almost boiling

An additional 1/2 cup milk (or cream)

2 TBS flour

Shake in batter shaker or mix until smooth. Add to milk and potatoes and heat. Stir constantly just until slightly thick.

1/2 tsp salt

1 tsp butter

Add and mix in thoroughly

Ladle into bowls and garnish with chives, bacon, and cheese.

Makes about 3 servings
