Tim’s Favorite Meatballs

I asked Tim what his favorite recipe was to share with you for Father’s Day. He immediately said chocolate milk :) I was thinking a little bit more substantial, so he kindly thought again and told me he really likes this family meatball recipe.

I love this recipe for its versatility. Make it all at once in the oven. Bake the meatballs earlier in the week and throw them with the sauce in the crockpot. You can even mix it up, form it into balls and freeze them (raw or baked — just don’t make the sauce yet) for future use.

Ingredients for Meatballs

1 Egg

Milk

Onions

Salt

Chili Powder

Garlic Powder

Pepper

Ground Beef

Ingredients for BBQ Sauce

Ketchup

Brown Sugar

Onions

Garlic Powder

Meatball Recipe

1 egg

1/2 cup milk

1/2 cup chopped onion (or 1 tsp of onion powder)

1 tsp salt

1/2 tsp chili powder

1/4 tsp garlic powder

1/4 tsp pepper

Mix together well.

1 1/2 lbs. of ground beef

Crumble over the top and mix in well. Form into balls and place in a 9x13 pan. Bake at 350 degrees for 20 minutes or until meat is thoroughly cooked.

BBQ Sauce Recipe (make while the meatballs are baking)

1 cup ketchup

3/4 cup packed brown sugar

1/4 cup chopped onions (or 1/2 tsp onion powder)

1/4 tsp garlic powder

Combine ingredients in a saucepan and bring to a boil. Reduce heat and the simmer for 2 minutes. Stir frequently. Pour over meatballs and bake an additional 10 - 12 minutes.

NOTE: The meatballs can be made ahead, baked and then placed in a crockpot with the bbq sauce and cooked on high for 3-4 hours. Double the bbq sauce recipe for the crockpot.
